My favorite meals are those I don't have to make! Not that I don't like cooking - I just feel added pressure to get nutrition packed into every bite with the girls. Dan made some fantastic Pad Thai - New Joy of Cooking has some surprisingly great recipes! He likes to shop at a couple of the oriental markets in town. Minimal/no boiling time with some yummy rice noodles, we've used chicken or shrimp (tend not to eat big eyed critters...), some basil off the back porch, and lots of lime and crushed raw peanuts to top it off! The fish sauce and sesame oil really make this yummy :) I'll have to ask him when he gets back from his travels what this delicioso curried chicken dish he made us a bit back was too G ate every bite and she's getting picky! He's our adventurous ethnic cookbook cook, ever since he discovered herbs and spices. We've got an entire giant drawer full of 'em! I'm more of a what do we have here kinda cook - maybe that's why it takes me so much brain energy! Happy chomping!
